Description

masakan ala2 omputeh campo italy gitu (hm yeke?) hehe ntahler.. cuba je ler ek.. nnt kasik komen =)

Ingredients
  • 2 - 3 tablespoon olive oil (2-3 sudu besar minyak zaitun, boleh ganti dgn minyak biase kalau takde)
  • 1 kg veal shank pieces (1 kg hujung kaki anak lembu)
  • enough plain flour to coat the veal (tepung gandum secukupnya untuk salut daging tadi)
  • 1 carrot, diced (1 biji karot, dipotong dadu)
  • 1 onion, diced (1 biji bawah merah, dipoting dadu.. kalau suka boleh letak lebih dr 1 biji)
  • 2 tablespoon tomato paste (2 sudu besar tomato pes)
  • 3 cups chicken stock (3 cawan air rebusan ayam)
  • 1 teaspoon dried oregano leaves (1 sudu kecil daun oregano kering)
  • 1 or 2 bay leaves (1 atau 2 helai daun bay kering)
  • 2 strips orange zest (parutan kulit buah oren.. tak perlu byk..sket saja dh cukup)
  • 2 tablespoon chopped flat-leaf parsley, plus extra to garnish (2 sudu besar daun parsley yg dipotong, tambah extra untuk hiasan)
  • salt (garam secukup rasa)
  • black pepper (serbuk lada hitam secukup rasa)
Instructions
  1. Preheat oven to 190 degree Celcius. (Panaskan oven pada suhu 190 darjah Celcius).

  2. Put the flour in a mixing bowl and add enough salt and black pepper to taste. (Di dalam sebiji mangkuk, gaulkan tepung gandum dgn garam dan serbuk lada hitam secukup rasa).

  3. Coat the veal with the flour. (Salutkan hujung kaki anak lembu tadi dgn tepung yg telah digaul).

  4. Heat oil in a frying pan and brwon the veal in batches. When finished, transfer the browned veal to a large ovenproof casserole. (Panaskan minyak di dalam kuali dan goreng hujung kaki anak lembu itu hingga warna kekuningan.. tak perlu masak sgt sbb nnt nak masak dlm oven lagi.. bila dah siap goreng, pindahkan ke dalam bekas untuk dimasukkan ke dlm oven).

  5. Add onion to the frying pan and cooked for 1 minute. Then, add carrot and continue stirring until onion is soft. (Kemudian, tumis kan bawang merah tadi sebentar dan masukkan karot.. masak sehingga bawang menjadi lembut).

  6. Stir through tomato paste and continue cooking for 1 minute. (Masukkan tomato pes dan teruskan memasak selama 1 minit).

  7. Add in the chicken stock, dried oregano, bay leaves and orange zest; season with salt and black pepper. Bring to boil, and pour mixture evenly over veal. (Tambahkan air rebusan ayam, daun oregano, daun bay, parutan kulit oren, garam dan serbuk lada hitam ke dalam kuali.. Teruskan memasak sehingga mendidih.. Kemudian, tutup api dan tuang kuah itu ke dalam bekas yg mengandungi kaki lembu tadi).

  8. Cover the casserole with aluminium foil and bake for 75 minutes until veal is barely tender. Then, stir through parsley. Bake uncovered for 15 - 20 minutes more until veal is quite tender and liquid reduced. Garnish servings with extra parsley. (Tutup bekas dgn aluminium foil dan bakar selama 75 minit sehingga kaki lembu menjdi agak empuk.. Kemudian, tambahkan daun parsley dan bakar tanpa aluminium foil selama 15-20 minit lagi sehingga kaki lembu lebih empuk dan kuah agak pekat.. Akhir sekali, hiaslah hidangan anda dgn lebihan daun parsley td).
